  • 1 whole whole chicken, cut into pieces
  • 2 cups buttermilk Essential for marinating.

For the flour coating

  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper

For frying

  • as needed vegetable oil For deep frying.

  • Marinate the chicken by soaking the pieces in buttermilk for at least two hours, or overnight for best results.
  • In a bowl, mix the all-purpose flour with salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.

Cooking

  • Heat vegetable oil in a deep fryer or a heavy skillet to 350°F (175°C).
  • Remove marinated chicken from buttermilk, letting excess drip off.
  • Dredge each piece of chicken thoroughly in the seasoned flour mixture.
  • Carefully place chicken in hot oil and fry for 15-18 minutes on each side, ensuring internal temperature reaches 165°F (74°C).
  • Drain the fried chicken on a plate lined with paper towels.
  • Serve hot with sides like mashed potatoes or coleslaw.
