Ingredients
  

For the Chicken

  • 8 pieces chicken drumsticks Choose quality chicken drumsticks.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil For greasing the baking dish.

For the Rice

  • 1 cup long-grain rice
  • 2 cups chicken broth Using broth enhances flavor.
  • 2 tablespoons butter Melt for sautéing the rice.
  • 1 cup corn Fresh or frozen.

For Garnish

  • to taste none Fresh parsley Optional, for garnishing.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C). Prepare a baking dish by lightly greasing it with cooking spray or a bit of olive oil.
  • In a small bowl, mix together garlic powder, onion powder, paprika, salt, and black pepper. Rub this seasoning mixture all over the chicken drumsticks, ensuring they are well coated.
  • Arrange the seasoned drumsticks in the prepared baking dish, ensuring they are spaced apart for even cooking.

Cooking the Rice

  • In a medium saucepan, melt the butter over medium heat. Add the rice and sauté for about 2 minutes, stirring constantly until the rice is slightly toasted.
  • Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes until the rice is tender.
  • After 15 minutes, gently fold in the corn and allow it to heat through. Check the rice for doneness, adjusting the cooking time as necessary according to package directions.

Baking the Chicken

  • While the rice is finishing, place the baking dish with the chicken in the preheated oven. Bake for about 30 to 35 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).
  • Once cooked, remove the baking dish from the oven and let the chicken rest for a few minutes before serving.

Serving

  • Serve the chicken drumsticks alongside the fluffy rice and corn, garnishing with fresh parsley if desired.
