Main Ingredients

  • 1 whole whole chicken (about 4-5 pounds) Select a high-quality, free-range or organic chicken for best flavor.
  • 2 pieces oranges, zested and halved
  • 2 pieces lemons, zested and halved
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • to taste Salt and pepper Season according to your preference.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a small mixing bowl, combine the olive oil, minced garlic, thyme, and rosemary, then season with salt and pepper.
  • Rub the mixture all over the chicken, including under the skin to ensure flavorful and moist meat.
  • Stuff the halved oranges and lemons into the cavity of the chicken.

Cooking

  • Place the chicken in a roasting pan, breast-side up.
  • Roast the chicken for about 1.5 hours, checking that the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 10 to 15 minutes before carving.

Serving

  • Carve the chicken and arrange it on a serving platter, garnished with fresh herbs.
  • Serve alongside roasted vegetables or a light salad.
