  • 2 cups almond flour A gluten-free alternative to traditional flour.
  • 1/4 cup coconut oil, melted Provides a rich texture.
  • 1/4 cup honey or maple syrup Choose according to your preference.
  • 1 teaspoon vanilla extract For added flavor.
  • 1/4 teaspoon salt To enhance flavors.
  • 1/2 teaspoon baking soda Helps the cookies rise.
  • 1/2 teaspoon cinnamon (optional) For a festive touch.

Optional Ingredients

  • 1 large egg (optional) Adds chewiness, but cookies can be made without it.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the almond flour, baking soda, salt, and cinnamon (if using).
  • Pour in the melted coconut oil, honey or maple syrup, and vanilla extract, mixing until a cohesive dough forms.
  • If using, add the egg and stir until fully incorporated.
  • Roll out the dough between two sheets of parchment paper to about 1/4 inch thick.
  • Cut out shapes using cookie cutters and transfer to a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for 8-10 minutes, until the edges are light golden brown.
  • Remove and let cool for a few minutes before transferring to wire racks to cool completely.
