  • 3/4 cup confectioners’ sugar For added sweetness.
  • 1 teaspoon pure vanilla extract Enhances the flavor.
  • 1/2 teaspoon almond extract Adds a distinctive taste.
  • 1/4 teaspoon salt Balances the sweetness.
  • 2 cups all-purpose cake flour Gives structure to the cookies.
  • 1/2 teaspoon baking powder Leavening agent.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the softened unsalted butter and confectioners’ sugar. Cream them together until light and fluffy (about 3-5 minutes).
  • Add the pure vanilla extract, almond extract, and salt. Mix until fully incorporated.
  • In a separate bowl, whisk together the cake flour and baking powder. Gradually add this dry mixture to your wet ingredients. Mix until combined, but avoid over-mixing.
  • Using a cookie scoop or spoon, scoop portions of dough onto a parchment-lined baking sheet, leaving space between each dough ball.
  • Sprinkle extra confectioners’ sugar on top of each dough ball.

Baking

  • Bake for 10-12 minutes until the edges are lightly golden and the center remains soft.
  • Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes
