Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion to the pot and sauté for 5-7 minutes until translucent.

  • Add the crushed tomatoes and vegetable broth to the pot, followed by the sugar.

Cooking

  • Increase the heat and bring the mixture to a boil.
  • Once boiling, reduce the heat to low and simmer gently for about 20 minutes.
  • Use an immersion blender to blend the soup until smooth.
  • Return the soup to the pot and stir in the heavy cream.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with fresh basil.
