  • 2 pounds potatoes, peeled and cubed Russet potatoes are recommended for creaminess.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream For a vegan option, substitute with coconut cream.
  • 2 tablespoons butter
  • to taste salt
  • to taste pepper
  • for garnish chives or green onions

Instructions
 

Preparation

  • Heat a large pot over medium heat and add the butter to melt.
  • Once melted, add the diced onion and minced garlic and sauté for about 3-4 minutes until translucent.
  • Add the cubed potatoes and pour in the broth to submerge them.

Cooking

  • Bring the soup to a rolling boil, then reduce heat and let it simmer for 15-20 minutes until potatoes are fork-tender.
  • Decide your preferred soup texture: blend for creaminess or leave as chunky.
  • Stir in the heavy cream, season with salt and pepper to taste.

Serving

  • Serve the soup warm in bowls and garnish with chives or green onions.
