Ingredients
  

  • ½ cup all-purpose flour
  • 2 large eggs
  • cup seasoned Italian bread crumbs
  • cup freshly grated Parmigiano-Reggiano cheese
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh herbs (thyme, parsley, chives, or rosemary)
  • 3-4 pieces boneless skinless chicken breasts (about 1 ½ pounds, pounded to ¼-inch thick)
  • ¼ cup olive oil
  • Lemon wedges for serving

Instructions
 

  • Set up three shallow bowls: one with flour, one with beaten eggs, and one with bread crumbs mixed with cheese, salt, pepper, and herbs.
  • Season the chicken with salt and pepper.
  • Dredge each chicken breast in flour, then dip it in eggs, and finally coat with the breadcrumb mixture.
  • Heat olive oil in a large sauté pan over medium heat.
  • Cook the chicken for 2-3 minutes on each side until golden brown and cooked through.
  • Let the chicken drain on paper towels and serve immediately with lemon wedges.
