Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
In a large mixing bowl, whisk together the vegetable oil, sugar, eggs, vanilla extract, and yogurt (or sour cream) until smooth.
Gradually add the dry mixture to the wet ingredients and gently stir until just combined. Be careful not to overmix.
Fold in the diced peaches, ensuring they are evenly distributed throughout the batter.
Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
