Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon optional but enhances flavor
  • ½ cup vegetable oil
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup plain yogurt or sour cream
  • cups diced ripe peaches peeled and chopped

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
  • In a large mixing bowl, whisk together the vegetable oil, sugar, eggs, vanilla extract, and yogurt (or sour cream) until smooth.
  • Gradually add the dry mixture to the wet ingredients and gently stir until just combined. Be careful not to overmix.
  • Fold in the diced peaches, ensuring they are evenly distributed throughout the batter.
  • Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
