Ingredients
  

Filling

  • 1 cup fresh or canned peaches, diced Choose ripe, sweet peaches if using fresh.
  • 1 teaspoon cinnamon
  • 2 teaspoons sugar
  • 8 ounces cream cheese, softened Must be at room temperature.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping

Assembly

  • 6-8 pieces waffle cones
  • 1 cup granola or crushed cookies for topping
  • Fresh mint leaves for garnish (optional)

Preparation

  • In a small bowl, combine the diced peaches, cinnamon, and sugar. Mix well and set aside.
  • In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  • Gradually add the powdered sugar and vanilla extract, mixing until fluffy.
  • Gently fold in the whipped topping until fully blended.

Assembly

  • Fill each waffle cone with a layer of the cheesecake mixture.
  • Top each cheesecake layer with a spoonful of the peach mixture.
  • Repeat layering until the cones are filled, leaving space at the top for toppings.
  • Sprinkle granola or crushed cookies on top and add a mint leaf for garnish.
  • Chill in the refrigerator for about 30 minutes prior to serving.

Notes
