Ingredients
  

Peach Filling

  • 2 cups fresh or canned peaches, chopped Use ripe peaches for best flavor; if using canned, choose those packed in juice.
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

For Wrapping and Frying

  • 1 package egg roll wrappers
  • Oil for frying Heat oil to 350°F for frying.
  • Powdered sugar for dusting (optional)
  • Vanilla ice cream or whipped cream for serving (optional) Great for pairing with egg rolls.

Instructions
 

Preparation

  • If using fresh peaches, peel, pit, and chop them; if using canned peaches, drain them well.
  • In a medium saucepan, combine the peaches, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well and cook over medium heat, stirring occasionally, until the mixture bubbles and thickens, about 5-7 minutes.
  • Once the filling reaches your desired consistency, remove it from heat and let it cool slightly.

Wrapping

  • Lay out an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the peach filling in the center of the wrapper.
  • Fold the corner closest to you over the filling, then fold in the sides, and roll it away from you to form a tight seam. Moisten the final corner with a bit of water to seal it. Repeat this process for the remaining wrappers and filling.

Cooking

  • In a deep skillet or fryer, heat oil to 350°F. Carefully add the egg rolls in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they turn golden brown and crispy.
  • Remove the egg rolls from the oil and place them on paper towels to drain excess oil.
  • If desired, dust with powdered sugar before serving.
