Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 cups granulated sugar
  • 0.5 cups packed brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cups milk
  • 0.33 cups vegetable oil
  • 1 large egg
  • 2 cups fresh or canned peaches, diced
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.
  • In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt. Whisk these dry ingredients together until well mixed.
  • In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until smooth.

Batter Preparation

  • Gradually pour the wet ingredients into the dry ingredients and stir gently until just combined; the batter will be slightly lumpy.
  • Gently fold in the diced peaches, being careful not to overmix.

Baking

  • Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes
