Ingredients
  

  • 1 medium peach diced
  • 1/2 cup old-fashioned oats
  • 3/4 cup non-dairy milk oat, almond, or soy
  • 1-2 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1 tablespoon ground flaxseed
  • a pinch salt
  • chopped pecans optional, for topping

Instructions
 

  • In a mason jar, add 1/2 cup of old-fashioned oats.
  • Pour in 3/4 cup of non-dairy milk of choice.
  • Drizzle in 1-2 tablespoons of pure maple syrup.
  • Add 1/2 teaspoon of vanilla extract and 1/2 teaspoon of pumpkin pie spice.
  • Stir in 1 tablespoon of ground flaxseed and a pinch of salt.
  • Mix everything well until combined.
  • Gently fold in half of the diced peaches.
  • Cover the jar and refrigerate for at least 4 hours or overnight.
  • When ready to serve, top with the remaining peaches and sprinkle with chopped pecans if desired.
