peach
diced

old-fashioned oats
3/4

non-dairy milk
oat, almond, or soy
1-2
tablespoons
pure maple syrup
1/2
teaspoon
vanilla extract
1/2
teaspoon
pumpkin pie spice

tablespoon
ground flaxseed
a pinch
salt
chopped pecans
optional, for topping

Instructions
In a mason jar, add 1/2 cup of old-fashioned oats.
Pour in 3/4 cup of non-dairy milk of choice.
Drizzle in 1-2 tablespoons of pure maple syrup.
Add 1/2 teaspoon of vanilla extract and 1/2 teaspoon of pumpkin pie spice.
Stir in 1 tablespoon of ground flaxseed and a pinch of salt.
Mix everything well until combined.
Gently fold in half of the diced peaches.
Cover the jar and refrigerate for at least 4 hours or overnight.
When ready to serve, top with the remaining peaches and sprinkle with chopped pecans if desired.
