Ingredients
  

  • 1/2 cup old-fashioned rolled oats
  • 3/4 cup almond milk
  • 1-2 teaspoons maple syrup or honey or your preferred sweetener
  • 1 teaspoon chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 2 tablespoons chopped peaches
  • as needed additional chopped peaches for topping

Instructions
 

  • In a mixing bowl, combine rolled oats, almond milk, sweetener, chia seeds, vanilla extract, cinnamon, and ginger.
  • Fold in the chopped peaches until evenly distributed.
  • Transfer the mixture to mason jars or airtight containers and seal them.
  • Refrigerate for at least a few hours, preferably overnight, to allow the oats to soak and soften.
  • When ready to serve, top with additional chopped peaches and enjoy!
