  • 1 cup peanut butter (creamy or crunchy) Use high-quality peanut butter for the best flavor.
  • 1 cup granulated sugar Can be substituted with natural sweeteners if desired.
  • 1 piece egg Large egg for binding.
  • 1 teaspoon vanilla extract Enhances the flavor.
  • 1/2 teaspoon baking soda For leavening.
  • 1/2 teaspoon salt Balances the sweetness.
  • 1/2 cup jelly or jam of your choice Classics like grape, strawberry, or raspberry work best.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the peanut butter and sugar together until smooth.
  • Add the egg, vanilla extract, baking soda, and salt to the bowl. Stir until well combined.
  • Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, spaced a couple of inches apart.
  • Use a fork to press down on each ball, creating a crisscross pattern on top.
  • Make an indent in the center of each cookie using your thumb or the back of a spoon.
  • Spoon a small amount of jelly into each indent, taking care not to overfill.

Baking

  • Bake for 10-12 minutes, or until golden around the edges.
  • Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
