  • 1 cup creamy peanut butter Can use crunchy for added texture
  • 1 ripe banana mashed banana Ensure it is very ripe for maximum sweetness
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with gluten-free flour blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Can use dark, semi-sweet, or white chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the creamy peanut butter and mashed banana until smooth.
  • Add the brown sugar and granulated sugar to the mixture and mix well.
  • Beat in the eggs, one at a time, followed by the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chocolate chips gently.
  • Drop rounded tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For added flavor, let the cookie dough chill in the refrigerator for at least 30 minutes before baking. Experiment with nuts, spices, or different types of chocolate chips for variations.
