Ingredients
  

Cheesecake Mixture

  • 2 cups cottage cheese Blended until smooth for a creamy texture.
  • 1 cup natural peanut butter Use high-quality, natural varieties.
  • 1/2 cup honey or maple syrup Adjust sweetness to preference.
  • 2 teaspoons vanilla extract
  • 1/2 cup plain Greek yogurt Full-fat version recommended for richness.
  • 1 tablespoon lemon juice
  • 1 teaspoon gelatin (optional) Dissolve in warm water if using.
  • A pinch salt

Optional Crust and Toppings

  • Crushed optional graham crackers or cookies For the base.
  • Chopped optional nuts or chocolate chips For topping before serving.

Instructions
 

Preparation

  • Blend the cottage cheese in a blender or food processor until smooth.
  • Add peanut butter, honey or maple syrup, vanilla extract, Greek yogurt, lemon juice, gelatin (if using), and a pinch of salt to the blender. Blend until smooth.
  • Taste the mixture and adjust the sweetness as needed by adding more honey or maple syrup.
  • If using a crust, layer crushed graham crackers or cookies at the bottom of serving cups and divide evenly.
  • Pour the peanut butter cheesecake mixture over the crust in each cup, filling nearly to the top.
  • Cover cups with plastic wrap and refrigerate for at least 2 hours, or until set.

Serving

  • Serve chilled, topped with nuts or chocolate chips if desired. Drizzle with honey or melted chocolate for added sweetness.
