Cookie Ingredients

  • 1 cup peanut butter Natural peanut butter works best.
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Filling and Toppings

  • 1 package (8-10 count) peanut butter cup candies Unwrapped.
  • Sprinkles For topping, optional.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine peanut butter, sugar, egg, and vanilla extract. Mix until smooth.
  • Shape the dough into balls about 1 to 1.5 inches in diameter.
  • Place the dough balls on a baking sheet lined with parchment paper.
  • Press gently in the center of each dough ball to create a small indentation.
  • Place a peanut butter cup candy in the center of each indentation.
  • Bake for 10-12 minutes until lightly golden around the edges.
  • Optionally, add sprinkles on top right after removing from the oven.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to one week, or refrigerate for two weeks. For longer storage, freeze individually wrapped cookies for three months.
