Preparation

  • In a large mixing bowl, combine the peanut butter, honey, and vanilla extract. Stir until the mixture is smooth and creamy.
  • In a separate bowl, mix together the rolled oats, cocoa powder, and salt.
  • Gradually add the dry mixture into the creamy peanut butter mixture, stirring well until everything is fully mixed.
  • Fold in the chocolate chips, ensuring they spread throughout the batter.
  • Using a spoon or a small cookie scoop, drop dollops of the mixture onto a lined baking sheet or a piece of waxed paper.
  • Flatten the cookies gently with the back of the spoon to achieve your desired thickness.
  • Place the cookies in the refrigerator for about 30 minutes, or until they have firmed up.
