Preparation

  • Preheat the oven to 350°F (175°C) and prepare two baking sheets with parchment paper.
  • In a large mixing bowl, blend together creamy peanut butter and packed brown sugar until smooth and creamy.
  • Crack the egg into the mixture and add vanilla extract; mix until well combined.
  • In a separate bowl, whisk together rolled oats, baking soda, and salt, then gradually add to the wet mixture.
  • Gently fold in the chocolate chips until evenly distributed.
  • Drop dollops of dough onto prepared baking sheets, spacing them about two inches apart.

Baking

  • Bake in the preheated oven for 10 to 12 minutes, watching for lightly golden edges.
  • Let cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
