  • 1 cup peanut butter Use creamy peanut butter for a smooth texture.
  • 1 cup brown sugar
  • 1 cup rolled oats Measure accurately for best results.
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or your favorite add-ins Optional for added flavor.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the peanut butter and both types of sugar. Stir well until creamy and smooth.
  • Add the egg and vanilla extract to the peanut butter mixture, mixing until fully combined.
  • Sprinkle in the baking soda and salt, then add the rolled oats. Stir until you achieve a well-mixed dough.
  • Fold in chocolate chips or any other mix-ins if using.

Baking

  • Use a tablespoon or cookie scoop to drop rounded portions of dough onto the prepared baking sheet, leaving space between each cookie.
  • Bake for 10-12 minutes, or until the edges are golden but the center looks slightly soft.
  • Remove from oven and let sit on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes
