Ingredients
  

Brownie Base

  • 1/2 cup unsalted butter, melted
  • 1/4 cup dark cocoa powder
  • 2 large eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 3/4 cup Andes peppermint crunch pieces, divided Use half for mixing in and half for topping
  • 1/2 cup white chocolate chips
  • 1/4 cup white chocolate peppermint coffee creamer
  • 2 tablespoons mini chocolate chips

Preparation

  • Preheat your oven to 350° F (175° C).
  • Coat an 8x8 baking pan with nonstick spray.

Mixing Ingredients

  • In a mixing bowl, whisk together the melted butter and dark cocoa powder until well combined. Set aside to cool slightly.
  • In a separate bowl, beat the eggs for a few minutes until light in color and slightly frothy.
  • Add the sugar and vanilla extract, continuing to beat the mixture.
  • Combine the butter and cocoa mixture with the egg mixture, stirring gently until cohesive.
  • In another bowl, combine the dry ingredients: all-purpose flour, salt, and baking powder.
  • Slowly fold the dry mixture into the wet ingredients, being careful not to overmix.

Baking

  • Spread the mixture evenly in the prepared baking pan.
  • Bake in the preheated oven for about 25-30 minutes.
  • Check for doneness by inserting a toothpick in the center; it should come out with a few moist crumbs.

Topping

  • Allow the brownies to cool completely in the pan.
  • In a microwave-safe bowl, combine white chocolate chips, white chocolate peppermint coffee creamer, and half of the peppermint crunch pieces.
  • Heat in the microwave for 30 seconds, then stir. Repeat until smooth and melted.
  • Spread the creamy mixture over the cooled brownies.
  • Sprinkle the remaining peppermint crunch pieces and mini chocolate chips on top.

Serving

  • Cut into 12 squares and serve on a festive platter.
  • Pair with vanilla ice cream or drizzle with chocolate sauce if desired.
