Ingredients
  

For the Cookies

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract

For the Ganache and Garnish

  • 1/4 cup crushed peppermint candies for garnish
  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Add the egg, vanilla extract, and peppermint extract into the butter mixture, mixing until well combined.
  • Gradually mix the dry ingredients into the wet ingredients until just incorporated.
  • Roll the dough into small balls and flatten them slightly on the prepared baking sheets.

Baking

  • Bake for about 10-12 minutes until the edges are golden and the center remains soft.
  • Allow the cookies to cool completely on a wire rack.

Making the Ganache

  • Heat the heavy cream in a saucepan over medium heat until it reaches a simmer.
  • Pour the hot cream over the chopped dark chocolate and mix until smooth.

Assembly

  • Take one cooled sugar cookie, spread ganache on the flat side, and top with another cookie.
  • Roll the edges in crushed peppermint candies for a festive touch.

Notes

Store cookies in an airtight container to maintain softness. If you rolled in crushed peppermint, store separately to retain crunch.
