Ingredients
  

Beef and Vegetables

  • 1 pound thinly sliced beef Sirloin or ribeye works best.
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded cheese (cheddar or provolone)

Base

  • 4 cups cooked rice or quinoa

Garnish

  • Fresh parsley, chopped For garnish

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced onions and bell peppers. Sauté for about 5 minutes, or until they soften.
  • Push the veggies to one side of the skillet and add the thinly sliced beef to the other side.
  • Season the beef with salt, pepper, garlic powder, and onion powder. Cook for about 3-4 minutes, stirring occasionally until the beef is browned and cooked through.
  • Mix the veggies back in with the beef, making sure everything is well combined.
  • Lower the heat, then sprinkle the shredded cheese over the beef and veggies. Cover with a lid and allow the cheese to melt, which should take about 2-3 minutes.
  • Serve the cheesy beef and veggie mixture over cooked rice or quinoa. Garnish with chopped parsley.

Notes
