Ingredients
  

  • 2 cups All-purpose flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 tsp Ground cinnamon
  • 3/4 cup Granulated sugar
  • 2 count Large eggs
  • 1/2 cup Vegetable oil
  • 1 tsp Vanilla extract
  • 1 1/2 cups Canned crushed pineapple with juice

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper.
  • In a large bowl, whisk together flour, baking soda, salt, and cinnamon.
  • In another bowl, beat the eggs, sugar, oil, and vanilla until fully combined. Stir in the crushed pineapple with its juice.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Pour the batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring to a wire rack. Cool completely before slicing.

Notes

This recipe can be customized by adding shredded coconut or nuts like walnuts or pecans for added texture and flavor. Enjoy warm or cold!
