Salad Ingredients

  • 2 cups fresh pineapple, diced Choose ripe pineapple for best flavor.
  • 2 cups cucumber, peeled and diced Select firm cucumbers for crunch.
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped Can substitute with mint or basil for variation.
  • 1 whole lime, juiced Juice adds brightness to the salad.

Instructions
 

Preparation

  • Cut the pineapple into small, bite-sized pieces.
  • Peel the cucumber and dice it into similar-sized pieces as the pineapple. Remove seeds if necessary.
  • Dice the red bell pepper and finely chop the red onion.
  • In a large mixing bowl, combine the diced pineapple, cucumber, red bell pepper, red onion, and chopped cilantro.
  • Squeeze the lime juice over the mixture.
  • Season with salt and pepper to taste and gently mix all the ingredients.
  • Let the salad sit for at least 10 minutes before serving.

Notes
