Ingredients
  

For the Cookies

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • Pink gel food coloring

For the Icing

  • 0.75 cup powdered sugar
  • 1.5 tablespoons milk
  • Sprinkles (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare baking sheets by lining them with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this mixture aside.
  • In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  • Add the egg, vanilla extract, and almond extract, mixing until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until everything is evenly combined.
  • Add the pink gel food coloring a little at a time, mixing until you reach your desired shade of pink.

Baking

  • Scoop tablespoon-sized balls of dough and place them on the prepared baking sheets, leaving enough space between each ball.
  • Gently flatten each ball with the bottom of a glass or your hand.
  • Bake for 8-10 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to finish cooling.

Icing

  • While the cookies cool, make the icing by whisking together the powdered sugar and milk. Adjust the consistency as needed.
  • Once the cookies are completely cool, drizzle or spread the pink icing on top and add sprinkles if desired.

Notes

Store your colored gel food coloring in a cool, dark place to maintain its vibrancy. If you're celebrating a birthday, consider packaging the cookies as party favors.
