Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 cup milk or buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup shelled pistachios roughly chopped and toasted
  • 1/2 cup granulated sugar

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a standard loaf pan.
  • Toast the pistachios on a baking sheet for 5-7 minutes. Let cool.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, beat softened butter with sugar until fluffy and pale.
  • Beat in eggs one at a time, then stir in vanilla extract.
  • Alternately add dry ingredients and milk to butter mixture, beginning and ending with dry ingredients. Mix gently until just combined.
  • Fold in the toasted pistachios carefully to distribute evenly.
  • Pour batter into prepared pan and smooth the top.
  • Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool bread in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Using fresh pistachios and toasting them intensifies the flavor and texture. Store bread airtight to keep it fresh for several days.
