Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened Butter should be creamy and spreadable.
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 1 cup pistachio cream
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2.5 cups all-purpose flour Measure carefully to avoid dense cookies.
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Garnish

  • 0.5 cup finely chopped pistachios For topping the cookies.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, beat the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 2-3 minutes.
  • Add the pistachio cream and vanilla extract, mixing until well combined.
  • Crack in the egg and mix until the batter is smooth.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Baking

  • Use a tablespoon or cookie scoop to drop rounded dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Slightly flatten each cookie with the bottom of a glass or your palm.
  • Sprinkle finely chopped pistachios on top for garnish.
  • Bake for 10-12 minutes or until edges are lightly golden and centers remain soft.
  • Remove from oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes
