  • 1 cup unsalted butter, softened 2 sticks
  • 1/2 cup powdered sugar
  • 3.4 ounce box instant pistachio pudding mix
  • 1 2/3 cups all-purpose flour
  • 1 1/2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 4-5 drops green food coloring

Preparation

  • Preheat your oven to 350°F (180°C) and prepare baking sheets with parchment paper.
  • In a large mixing bowl, cream the softened butter until light and fluffy.
  • Gradually add powdered sugar to the creamed butter, mixing until well combined.
  • Add the instant pistachio pudding mix, almond extract, vanilla extract, and green food coloring, mixing until well combined.
  • Slowly incorporate all-purpose flour into the mixture until there are no streaks of flour visible.
  • Chill the dough in the refrigerator for about 30 minutes.
  • Scoop the dough into balls and place them on the prepared baking sheets leaving space between each.
  • Bake the cookies in the preheated oven for 9-11 minutes, until the edges are light brown and centers remain soft.
  • Allow the cookies to cool on the baking sheet for 3-5 minutes, then transfer to a wire rack to cool completely.
