Ingredients
  

For the Cupcakes

  • 1 ¾ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk

For the Frosting

  • 4 cups powdered sugar
  • 1 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 2-4 tbsp heavy cream or milk Adjust for desired consistency
  • to taste white chocolate chips for eyes
  • to taste mini chocolate chips for decorating

For Decoration

  • to taste shredded coconut optional for a snowy effect
  • to taste mini marshmallows for ears

Instructions
 

Preparing the Cupcake Batter

  • Preheat your oven to 350°F (175°C) and line your cupcake pan with paper liners.
  • In a medium bowl, combine the flour, baking powder, baking soda, and salt. Mix well and set aside.
  • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3 to 5 minutes.
  • Add the eggs one at a time, mixing well before adding the next. Stir in the vanilla extract.

Combining Wet and Dry Ingredients

  • Gradually add the dry mixture to the butter mixture, alternating with buttermilk. Mix until just combined.

Baking the Cupcakes

  • Scoop the batter into the cupcake liners, filling them about two-thirds full.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cool for 5 minutes before transferring to a wire rack.

Making the Frosting

  • Beat the softened butter in a large bowl until creamy, about 2 minutes.
  • Gradually add the powdered sugar and mix well.
  • Add the vanilla extract and 2 tablespoons of heavy cream or milk. Beat until fluffy and smooth, adding more cream if needed.

Frosting the Cupcakes

  • Once cooled, use a piping bag to frost each cupcake, aiming for a peak in the center.

Decorating

  • Press two mini marshmallows into the frosting for polar bear ears, use white chocolate chips for the eyes, and a mini chocolate chip for the nose.
  • Sprinkle with shredded coconut for a snowy effect if desired.
