Instructions
Preheat your oven to 350°F (175°C) and lightly grease a 9x13 casserole dish.
In a large mixing bowl, combine the cream of chicken soup, sour cream, and cooked shredded chicken. Season with salt and pepper to taste.
Spread the chicken mixture evenly in the prepared casserole dish.
Bake for about 20 minutes until heated through.
In a medium bowl, combine the crushed Ritz crackers and poppy seeds. Pour the melted butter over this mixture and toss until well-coated.
After 20 minutes, remove the casserole from the oven and sprinkle the cracker mixture evenly over the top.
Return to the oven and bake for an additional 10 minutes, or until bubbly and golden brown.
Serve hot over cooked white rice.
