This comforting Poppy Seed Chicken casserole combines shredded chicken in a creamy sauce, topped with crunchy Ritz crackers and poppy seeds.

Ingredients
  

  • 10 oz cream of chicken condensed soup
  • cups sour cream
  • 3 cups cooked shredded chicken
  • Salt to taste
  • Black pepper to taste
  • 2 sleeves Ritz crackers crushed
  • 2 tablespoons poppy seeds
  • ½ cup unsalted butter melted
  • Cooked white rice for serving

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13 casserole dish.
  • In a large mixing bowl, combine the cream of chicken soup, sour cream, and cooked shredded chicken. Season with salt and pepper to taste.
  • Spread the chicken mixture evenly in the prepared casserole dish.
  • Bake for about 20 minutes until heated through.
  • In a medium bowl, combine the crushed Ritz crackers and poppy seeds. Pour the melted butter over this mixture and toss until well-coated.
  • After 20 minutes, remove the casserole from the oven and sprinkle the cracker mixture evenly over the top.
  • Return to the oven and bake for an additional 10 minutes, or until bubbly and golden brown.
  • Serve hot over cooked white rice.
