  • 1 lb kielbasa, sliced Use high-quality kielbasa for best flavor.
  • 1 large onion, chopped Adds aromatic flavor to the soup.
  • 3 cups chicken broth Store-bought or homemade.
  • 2 cups shredded cheese (cheddar or your choice) Choose your favorite cheese for variation.
  • 1 cup heavy cream Can substitute with half-and-half for lighter option.
  • 2 tablespoons olive oil For sautéing the onion.
  • Salt to taste Adjust according to preference.
  • Pepper to taste Adjust according to preference.

Preparation

  • Heat the olive oil in a large pot over medium heat until it shimmers.
  • Add the chopped onion to the pot and cook for about 4 to 5 minutes until soft and translucent.
  • Stir in the sliced kielbasa and cook for 5 to 7 minutes until golden brown.
  • Add the diced potatoes and pour in the chicken broth. Raise the heat to bring to a boil, then reduce to a simmer.
  • Cook for 15 to 20 minutes until the potatoes are tender.
  • Stir in the heavy cream and shredded cheese gradually until fully melted and the soup is smooth.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with extra cheese if desired.

Notes

For texture, reserve some diced potatoes before adding the cream and cheese. Blend the rest for a creamy consistency, then mix in the reserved pieces.
