Ingredients
  

  • ¾ cup old-fashioned rolled oats
  • ¾ cup white whole wheat flour
  • ½ cup vanilla protein powder
  • 1 teaspoon baking soda
  • teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 3 large bananas (mashed, about 1¼ cup)
  • ½ cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup or honey/agave

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • Blend the rolled oats in a food processor until they reach a fine flour texture. Transfer to a mixing bowl.
  • Stir in the protein powder, white whole wheat flour, baking soda, baking powder, kosher salt, and ground cinnamon.
  • In a separate bowl, mash the ripe bananas and mix in the egg, Greek yogurt, vanilla extract, and maple syrup until smooth.
  • Gently fold the dry ingredients into the wet mixture until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for approximately 35-45 minutes, checking for doneness with a toothpick.
  • Let cool slightly in the pan before transferring to a wire rack to cool completely.
