Instructions
Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
Blend the rolled oats in a food processor until they reach a fine flour texture. Transfer to a mixing bowl.
Stir in the protein powder, white whole wheat flour, baking soda, baking powder, kosher salt, and ground cinnamon.
In a separate bowl, mash the ripe bananas and mix in the egg, Greek yogurt, vanilla extract, and maple syrup until smooth.
Gently fold the dry ingredients into the wet mixture until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for approximately 35-45 minutes, checking for doneness with a toothpick.
Let cool slightly in the pan before transferring to a wire rack to cool completely.
