Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup Greek yogurt
  • 1/2 cup protein powder
  • 1 teaspoon vanilla extract
  • 1 large egg

Optional Mix-ins

  • 1/2 cup chocolate chips or chopped nuts Optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a bowl, mix together the all-purpose flour, baking soda, baking powder, and salt.
  • In another large bowl, beat together granulated sugar, brown sugar, and Greek yogurt until smooth.
  • Whisk in the protein powder, vanilla extract, and egg until everything is well combined.
  • Gradually add the dry mix into the wet mixture, stirring until just combined.
  • If desired, fold in chocolate chips or nuts.

Baking

  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
  • Bake for 10-12 minutes, until edges are golden.
  • Allow cooling on the baking sheet before transferring to a wire rack.

Notes

Don’t overmix the dough for softer cookies. You can refrigerate the dough for an hour before baking for thicker cookies.
