  • 1 cup Greek yogurt High-quality Greek yogurt preferred for best flavor and texture.
  • 1/2 cup sweetener of your choice (like honey or maple syrup) Adjust sweeter according to taste.
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup rolled oats Use certified gluten-free oats for a gluten-free version.
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Optional Add-ins

  • 1/2 cup chocolate chips or chopped nuts Optional, can be substituted with dried fruits or seeds.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the Greek yogurt, sweetener, and vanilla extract until well combined.
  • In a separate bowl, combine the rolled oats, almond flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. If desired, fold in chocolate chips or nuts.
  • Scoop tablespoon-sized amounts of the dough and place them on a lined baking sheet, spacing them about 2 inches apart.
  • Flatten the dough slightly with the back of your spoon or hand.

Baking

  • Bake for 12 to 15 minutes or until the edges start to turn golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
