Ingredients
  

Dough Ingredients

  • 1 cup almond flour Gluten-free base
  • 1/2 cup protein powder Your choice of flavor
  • 1/4 cup unsweetened cocoa powder or other flavor For chocolate flavor, optional
  • 1/4 cup sweetener of choice e.g., stevia, monk fruit
  • 1/4 cup unsweetened nut milk e.g., almond, cashew milk
  • 1/4 cup unsweetened applesauce Acts as a binder and adds moisture
  • 1 large egg For binding
  • 1 teaspoon vanilla extract For flavor
  • 1/2 teaspoon baking powder For leavening
  • 1 pinch salt Enhances flavor

Filling Ingredients

  • 1/3 cup filling of choice e.g., jelly, nut butter, chocolate chips

Optional Toppings

  • icing, sprinkles, or cocoa nibs For decoration

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the almond flour, protein powder, cocoa powder (if using), sweetener, and baking powder together.
  • In another bowl, whisk together the nut milk, applesauce, egg, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until you form a dough. If the dough is too crumbly, add a little more nut milk.
  • Divide the dough into two equal parts and flatten each into a rectangle.
  • Place one rectangle on the lined baking sheet and spread your filling evenly across it, leaving a small border around the edges.
  • Place the second rectangle on top of the filled rectangle and press the edges together to seal.
  • Use a fork to crimp the edges and create a decorative finish.

Baking

  • Bake in the preheated oven for 15-20 minutes, or until the edges turn golden brown.
  • Remove from the oven and let cool before adding any optional toppings.
