Ingredients
  

Puff Pastry and Filling

  • 1 package puff pastry (thawed)
  • 2 cups fresh spinach (chopped)
  • 1 cup ricotta cheese
  • 1 cup feta cheese (crumbled)
  • 1 large egg
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • Salt and pepper (to taste)
  • Olive oil (for cooking)
  • a pinch nutmeg (optional)

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Add the chopped spinach to the skillet and cook until wilted, which typically takes about 2-3 minutes. Remove from heat and let the mixture cool.
  • In a bowl, combine the ricotta cheese, crumbled feta cheese, and the cooked spinach mixture. Add in the egg, salt, pepper, and a pinch of nutmeg if desired. Mix thoroughly until well combined.
  • Roll out the thawed puff pastry on a lightly floured surface and cut it into squares or circles.
  • Place a spoonful of the spinach mixture in the center of each pastry piece, then fold the dough over to create a pocket, sealing the edges with your fingers or a fork.
  • Transfer the pielets to the prepared baking sheet and brush the tops with a little olive oil or egg wash for a golden finish.
  • Bake in the preheated oven for 25-30 minutes or until the pastry is puffed up and golden brown.
  • Let cool slightly before serving. Enjoy warm or at room temperature.

Notes

Keep puff pastry cold while working to maintain its texture. For a shinier finish, use an egg wash instead of olive oil.
