Instructions
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
In a large mixing bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Whisk until well blended.
In a separate medium bowl, mix pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract until smooth.
Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing.
Pour the batter into the greased loaf pan and smooth the top.
Bake for about 1 hour, or until a toothpick inserted into the center comes out with a few moist crumbs.
Allow the bread to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
