Ingredients
  

Dry Ingredients

  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1/4 tsp salt

Wet Ingredients

  • 4 large flaxseed eggs (4 tbsp ground flaxseed mixed with 12 tbsp water) Make flaxseed eggs by mixing flaxseed with water and letting sit for 5-10 minutes.
  • 1.5 cups unsweetened almond milk
  • 1 cup coconut milk
  • 1 15 oz can pumpkin puree
  • 1 tsp vanilla extract

Main Ingredients

  • 1 16 oz loaf hearty crusty French bread (vegan), cut into 1-inch cubes Stale bread works best.
  • Vegan salted caramel sauce for serving
  • 1/2 cup toasted pecans, chopped, for serving
  • Vegan sweetened whipped cream for serving

Instructions
 

Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a large mixing bowl, combine the packed light brown sugar, granulated sugar, ground cinnamon, ground nutmeg, ground ginger, ground cloves, and salt. Whisk until well blended.
  • Prepare the flaxseed eggs by mixing ground flaxseed with water; let it sit for about 5-10 minutes.
  • Add the flaxseed egg mixture, unsweetened almond milk, coconut milk, pumpkin puree, and vanilla extract to the dry ingredients. Whisk until smooth.
  • In an XL mixing bowl, place the cubed French bread and pour the pumpkin mixture over it. Gently toss to coat the bread evenly.
  • Allow the mixture to rest for about 10 minutes for the bread to soak up the pumpkin mixture.
  • Transfer the mixture into a buttered 12x8-inch or 13x9-inch baking dish. Spread it out evenly.

Baking

  • Bake in the preheated oven for approximately 45-50 minutes, or until set. A toothpick inserted in the center should come out clean.
  • Remove from oven and allow to cool briefly before serving.

Serving

  • Slice into generous portions and serve warm, drizzled with vegan salted caramel sauce and topped with chopped toasted pecans and whipped cream.

Notes

For the best texture, use stale bread. Feel free to experiment with spices and toppings according to your taste. Allow the pudding to cool before serving to enhance flavor.
