In a stand mixer, combine the softened cream cheese, shredded cheddar cheese, diced onion, chunky salsa, and ground cumin. Mix until well incorporated and creamy.
Transfer the cheese mixture onto a large piece of plastic wrap. Gather the edges to form a ball, shaping it firmly.
Chill the wrapped cheese ball in the refrigerator for at least two hours to allow flavors to meld and help it maintain its shape.
After chilling, remove the cheese ball from the plastic wrap and place it on a serving platter. Roll the cheese ball in the crumbled Doritos until fully coated.
Cut a small piece from the green bell pepper and insert it into the top of the cheese ball to resemble a pumpkin stem.
