Ingredients
  

For the soup base

  • 2 tablespoons sesame oil For flavor and cooking
  • 1 bunch green onions, sliced (white and green parts separated) Add freshness and aroma
  • 2 cloves garlic, minced For flavor
  • 1 tablespoon freshly grated ginger For aromatic flavor
  • 8 cups chicken broth Heart of the soup; can substitute with vegetable broth

For the wontons and greens

  • 12 to 16 pieces wontons (store-bought or homemade) Main filling; adjust based on preference
  • 1 cup baby spinach For added nutrients and color
  • soy sauce and pepper to taste For seasoning

Preparation

  • Heat sesame oil in a large pot over medium heat.
  • Add the white parts of sliced green onions, minced garlic, and grated ginger, and sauté for about 2 minutes until fragrant.

Cooking the soup

  • Pour in chicken broth and bring to a gentle boil.
  • Gently add wontons to the boiling broth and cook for about 5 to 7 minutes, following the instructions on the package if using store-bought.
  • Add baby spinach and stir until wilted.
  • Season with soy sauce and freshly cracked pepper to taste.
  • Ladle soup into bowls and garnish with the green tops of the sliced green onions.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days or freeze the broth and wontons separately for longer storage. Adjust seasonings to taste before serving, and consider adding fresh herbs as garnish.
