  • 1 pound salmon fillet, skin removed Fresh salmon is recommended for the best taste.
  • 1 cup panko breadcrumbs Use dry and crunchy panko.
  • 2 tablespoons olive oil Can be adjusted for personal preference.
  • 1 teaspoon lemon zest Freshly grated for best flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped Can be substituted with other herbs like dill.
  • to taste dipping sauce of your choice Suggestions: tartar sauce, garlic aioli, or lemon dip.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Cut the salmon fillet into bite-sized pieces, ensuring they are uniform in size for even cooking.

Coating

  • In a shallow bowl, combine the panko breadcrumbs, olive oil, lemon zest, garlic powder, onion powder, salt, black pepper, paprika, and chopped parsley. Mix well until the panko is evenly coated with oil and all the spices are combined.
  • Dip each salmon piece into the panko mixture, pressing gently to ensure they are well coated.

Baking

  • Place the coated salmon bites on the prepared baking sheet, ensuring they are spaced apart to allow for even crisping.
  • Bake for about 15-20 minutes, or until the salmon is cooked through and the panko is golden brown and crispy.
  • Remove from the oven and let them cool slightly on the baking sheet before serving.

Notes
