  • 2 cups rotisserie chicken, shredded
  • 2 medium zucchinis, sliced
  • 1 cup shredded cheese (cheddar or mozzarella) Customize with different cheese varieties.
  • 1 cup diced tomatoes (canned or fresh) Fresh tomatoes are recommended when in season.
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat.
  • Add the chopped onion and minced garlic; sauté until the onion is translucent, about 3 minutes.
  • Toss in the sliced zucchini and cook for 5-7 minutes until they soften slightly.
  • In a mixing bowl, combine the sautéed zucchini with shredded rotisserie chicken and diced tomatoes; add Italian seasoning, salt, and pepper, and stir together.

Assembly

  • Grease a casserole dish with cooking spray or oil and pour the mixed ingredients into the dish, spreading them evenly.
  • Sprinkle shredded cheese generously over the top.

Baking

  • Place the dish in the preheated oven and bake for 25-30 minutes, until the cheese is melted and golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

This casserole is excellent for meal prep and can be stored in an airtight container for up to 4 days in the refrigerator. It can also be frozen for up to 3 months. Consider garnishing with fresh herbs for added flavor.
