  • 1 can (14 oz) diced tomatoes Canned or fresh can be used.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil For sautéing.

Preparation

  • Begin by selecting a large pot or saucepan. Place it over medium heat on your stove and add the tablespoon of olive oil. Allow the oil to heat up slightly, making sure it doesn’t smoke.
  • Add the chopped onion to the pot and let it sauté until it becomes soft and translucent, about 3-5 minutes. After that, toss in the minced garlic and stir for an additional 1-2 minutes.
  • Pour in the can of diced tomatoes along with the vegetable broth. Stir everything together and let it come to a gentle boil.
  • Once boiling, add the orzo pasta to the pot. Cook following the package instructions, which typically takes around 7-10 minutes. Stir occasionally to prevent sticking.
  • Taste the soup and add salt and pepper according to your preference.
  • When the orzo is al dente, take the pot off the heat, serve hot, and garnish with fresh basil leaves.

Notes

For a creamier soup, stir in a splash of heavy cream or add a drizzle of olive oil before serving. Consider cooking orzo separately if saving for later to prevent it from becoming mushy.
