  • 3 very ripe Bananas (about 1 ½ cups mashed)
  • 1 cup Granulated Sugar (brown sugar works well too)
  • 2 Large Eggs
  • ½ cup Unsalted Butter melted
  • 1 ½ cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 teaspoon Pure Vanilla Extract

Instructions
 

  • Preheat oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or line with parchment paper.
  • Mash the ripe bananas in a large bowl until smooth but slightly chunky.
  • Add sugar, eggs, melted butter, and vanilla extract to the mashed bananas and stir until creamy and combined.
  • In another bowl, whisk together flour, baking soda, and salt.
  • Gradually add dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing.
  • Pour batter into prepared pan and smooth the top.
  • Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool in pan for 10 minutes then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas with lots of brown spots for maximum sweetness. You can customize by adding nuts, chocolate chips, or spices like cinnamon or nutmeg.
