  • 1 cup red lentils Rinse before cooking
  • 1 piece onion, diced
  • 2 pieces carrots, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin Enhances flavor
  • 1 teaspoon coriander Enhances flavor
  • 4 cups vegetable broth Can substitute with water
  • 2 tablespoons olive oil For sautéing
  • to taste Salt and pepper
  • 1 piece Juice of 1 lemon Brightens flavors
  • as needed Fresh parsley for garnish

Preparation

  • Heat 2 tablespoons of olive oil in a heavy-bottomed pot over medium heat.
  • Add diced onion and carrots, sauté for about 5-7 minutes until tender and onions are translucent.
  • Stir in minced garlic, cumin, and coriander; cook for an additional minute to enhance flavors.
  • Add red lentils and vegetable broth, bring to a boil, then reduce heat and let simmer for about 20 minutes until lentils are tender.
  • Season the soup with salt, pepper, and lemon juice before serving.
  • Garnish with fresh parsley before ladling into bowls.

Notes
