  • 4 medium red potatoes, diced Choose firm, unblemished potatoes.
  • 2 tablespoons butter For sautéing and flavor.

  • 4 cups chicken or vegetable broth Homemade broth can enhance flavor.
  • 1 cup heavy cream For creaminess.
  • Salt, to taste Adjust to preference.
  • Pepper, to taste Adjust to preference.
  • Chives, chopped (for garnish) Adds freshness and color.

Preparation

  • Melt the butter in a large pot over medium heat.
  • Add the chopped onions and sauté until soft and translucent, about five minutes.
  • Stir in the minced garlic and sauté for an additional minute.
  • Add the diced red potatoes and broth to the pot.
  • Bring to a boil, then reduce heat and simmer for about 15 to 20 minutes until the potatoes are tender.
  • Blend the soup to your desired consistency with an immersion blender.
  • Stir in the heavy cream and season with salt and pepper to taste.

Serving

  • Ladle soup into bowls and garnish with freshly chopped chives.

Notes
