Ingredients

Baking Ingredients

  • 2 boxes red velvet cake mix (16.5 oz each)
  • 6 large eggs
  • 2/3 cup vegetable oil
  • 6 very ripe bananas (mashed) For maximum sweetness
  • 12 ounces semi-sweet chocolate chips
  • 1 cup chopped walnuts
  • 8 ounces white candy melts For topping
  • to taste sprinkles For decoration

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line 5 loaf pans measuring 8" x 3 ¾" x 2 ½" with parchment paper. Lightly spray them with cooking spray.

Mix Ingredients

  • In a large mixing bowl, combine the red velvet cake mix, eggs, and vegetable oil. Add the mashed bananas and mix on low speed for 20 seconds, then on medium speed for 2 minutes until smooth.

Add Chocolate and Nuts

  • Gently fold in the semi-sweet chocolate chips and chopped walnuts.

Bake

  • Pour the batter into the prepared loaf pans, filling them two-thirds full. Bake for approximately 40 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Top

  • Allow the loaves to cool in the pans for a few minutes, then transfer to a wire rack to cool completely. While cooling, melt the white candy melts in a microwave-safe bowl and drizzle over the cooled loaves. Sprinkle with colorful sprinkles and let the topping set for 20-30 minutes.

Notes

Use very ripe bananas for the best flavor and avoid over-mixing after adding chocolate chips and walnuts. Monitor baking time closely to prevent over-browning.
