  • 4 pieces ripe peaches Choose ripe and freestone peaches for best results.
  • 2 tablespoons brown sugar Can substitute with honey or maple syrup.
  • 1 tablespoon lemon juice Enhances flavor and prevents browning.
  • 1 teaspoon ground cinnamon Optional, for extra flavor.
  • 1 pint vanilla ice cream Can substitute with yogurt or other ice cream flavors.
  • Fresh mint leaves for garnish Optional, for a pop of color and aroma.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Wash and halve the peaches, removing the pits.
  • Lay the peaches cut-side up in a baking dish.
  • Drizzle the lemon juice over the peaches.
  • Sprinkle the brown sugar evenly over each peach half, and optionally add ground cinnamon.

Cooking

  • Roast the peaches in the oven for about 20-25 minutes, or until they start to soften and caramelize.
  • Once done, remove them from the oven and let cool slightly.

Serving

  • Serve each roasted peach half with a generous scoop of vanilla ice cream on top.
  • Optional: Drizzle some baking juices over the ice cream, and garnish with fresh mint leaves.

Notes

Best enjoyed immediately. Leftover peaches can be stored in an airtight container in the refrigerator for 3-5 days without ice cream. Rewarm gently before serving.
